The ripening of the grapes took place in a not uniform depending on the variety, the earliest were collected in line with previous years and the wines are a bit 'lighter in structure, but are characterized by good acidity and freshness of aromas. The later varieties such as Sangiovese have benefited for the maturation of the good season back from mid-September to early October, giving less alcoholic wines and less powerful than the last few years, yet elegant and tasty.
Winemaking: After a cool summer also marked by some rain, we gathered the grapes destined for Sabazio 2014 around the middle of September. Vintage characteristics have favored the fruity aromas and fragrance of the wine to the body, so the wine was intended to give priority to the first without forcing extractions. After a maceration of about 7 days in stainless steel vats, the resulting wine was racked into barrels, where malolactic fermentation and aging began a period lasting about four months. The wine so obtained was then prepared for bottling.
