CHIANTI HIGHER D.O.C.G. It is produced with 90% Sangiovese and 10% Colorino. What makes this wine particularly unique is its traditional process: the "Government-Use Toscano." Consists, once the Sangiovese must have finished the fermentation, the start it again with clusters of Colorino wilted and the stems are removed in mano.Questa double fermentation gives the wine a freshness and a round taste that follows the best tradition of Chianti.
