Vin Santo Palazzi Sisters Farm is a sweet wine made in an absolutely traditional: in early September is made careful selection of white grapes (cultivar Trebbiano Toscano, Malvasia Bianca and Colombana) most suitable for drying. The selected grapes are placed to dry in a suitable room on mats, called "hurdles". And 'This is the most delicate moment for the Vin Santo, as the bunches must be well prepared and a necessary ventilation to prevent the formation of mold and allow proper and consistent un'appassimento. In February the dried grapes (which have lost about 40% by weight) are vinified with fermetazione of sugars, which will always remain a residual fraction. The Vin Santo is then left to age in oak barrels (casks usually of oak and chestnut wood 1 and 2 hl capacity), and mouth sealed. Past five years takes place the opening of the barrel and after a period of aging, the wine is bottled. It 'a wine of remarkable complexity and intensity of aromas, generally pretty alcoholic and with a harmonious balance between acidity and sweetness
