In Tenuta Torre a Cenaia, former property of the Picts, from a vine that Tuscany has found the most suitable environment for its development, comes a wine unique and unrepeatable result of a rigorous selection of grapes during harvest and a vinification . It goes perfectly with fish dishes, white meats, cold cuts, cheese, mushrooms and truffles
Harvest: Second, third decade of September.
Vinification: De-stemming, cold maceration, temperature-controlled fermentation in stainless steel tanks for 20-30 days. Aging on the lees for three months. Ageing: 90% in concrete tanks, 10% in oak barrels for 12 months.
Refinement: In the bottle for 8 months
