The Cervaro della Sala, "wine-symbol" of the estate that boasts major awards and especially many loyal fans, is produced from Chardonnay and Grechetto grapes; fermentation and aging (five months) takes place in oak barrels, chased, the wine is aged in the bottle for about 10 months in the cellars of the medieval castle.
